Keith Karaff is the Executive Director of CASI (Chili
Appreciation Society International). Each year CASI sanctions
nearly 400 domestic and international chili cook-offs as
qualifying events for the CASI Terlingua International Chili
Championships, known as TICC. These sanctioned events raise
approximately $1,000,000 annually for the local and national
charities that work with the cook-off organizers. The ultimate
chili championship is held the first Saturday of November
