On this episode of The Main Course, host Barbara Castiglia chats
with Eric Symon, Director of the Enterprise Process Innovation
Center & Food Services Group at Panasonic System Solutions
Company of North America. They delve into the past, current and
future of restaurant technologies, the changes the pandemic has
brought about, the technology that enables faster consumer
throughput while limiting equipment failures (whether it’s AI
that anticipates demand, enabling kitchens to prepare and serve
food more quickly, or IoT that monitors devices and identifies
glitches before they fail) and will ultimately lead the way to
the industry’s recovery, the balance of actionable data versus
privacy concerns, and more.
“I think ‘connected restaurant’ today means kind of one thing to
us, but we see that evolving over time into really what’s going
to be a smart restaurant kind of concept where everything is
connected—you have a single hub with a point-of-sale system, and
you apply technologies like AI and IoT to help with everything
from food preparation to maintenance and management of all the
devices as well.”
