About Dave Willis


Co-founder & Head of Whiskey Production, Dave is a co-founder
and heads up all facets of whiskey production. As kids growing up
on a working farm, Dave and his brother Will made cider from
apples that grew on the property. It wasn't long before an
appreciation for cider lead to an appreciation for hard cider.
That lead to experimentation with apple brandy, which they
crafted using a small one-gallon still. Dave proved particularly
adept at the science of fermentation, distillation, and aging. He
has overseen the research, development, and launch of their
award-winning spirits and, in 2017, shifted roles to focus
exclusively on whiskey production.
