Most of us have been raised to believe that high cholesterol is
bad for you, end of story. This simplified understanding does not
take into account the different types of cholesterol, some of
which are very good for us and are actually necessary for the
proper functioning of our cell walls.
Polyunsaturated fats and trans fats (the bad fats) from processed
foods and refined oils like canola oil create cell walls that are
flabby and unhealthy. Saturated fats (the good fats) from meat,
dairy, olive and coconut oils on the other hand, give our cells
the necessary stiffness and stability for healthy structural
integrity.
Good cholesterol (from saturated fats) is a precursor for vitamin
D, a hormone needed for healthy bones, proper growth, mineral
metabolism, muscle tone, insulin production, reproduction, and
immune system function.
