Stanley Tucci Teaches Holly How to Make the Perfect Martini! Gird your loins as Hollywood royalty and star of Devil Wears Prada, Stanley Tucci, teams up with Holly to stir - not shake - up the perfect martini. Watch as Holly puts Stanley through a celebrity card game, with surprise questions from Richie Anderson, Joel Dommett and Chesney Hawkes, plenty of laughs and a few unexpectedly sweet moments! Stanley also reveals the one item he could never live without, what tattoo he would get if he had to (hint: it might involve a martini glass) and opens up about being a shy kid who just wanted to fall in love. In this rocket-fueled episode, there’s plenty of tricks, tips and vodka to go around. Just don’t tell James Bond! Martini Method (makes 2): ¾ shot dry white vermouth 4 shots vodka (or gin, if you're a traditionalist) Plenty of ice Lemon peel, plus olives if you like Fill a stirring jug with ice, pour in the vermouth and vodka, and stir (never shake!) until smooth but you can still taste the alcohol. Strain into two chilled martini glasses. Squeeze the oils from a strip of lemon peel over each drink, rub it round the rim and drop it in. Adding olives? Use one or three on a stick, never two. Stanley's tip: no stirring jug? A pint glass will do. Please drink responsibly. One is great, two at most, three and you're under the table, four and you're under the host! Idris Elba's private chef King is back to show Holly how to make his signature suya dry rub, and restaurant-quality scallops in just 90 seconds. Together with his delicious sunshine whip, he reveals how to cook the perfect West African dish in minutes, a dish he made for legendary tennis starSerena Williams. KEY MOMENTS 00:00 Coming up 00:30 King The Chef is back 00:42 The flavour of King's heritage, suya 03:45 Introducing Holly to suya 06:20 The great plantain pronunciation debate 08:00 Making the sunshine whip 09:58 Making the suya spice powder 11:50 Cooking for Serena Williams 15:40 Plating up SEARED SUYA SCALLOPS Ingredients: 6 large king scallops, roe on or off, patted very dry 1.5 tbsp suya spice blend 2 tbsp avocado oil 20g unsalted butter 60g roasted unsalted peanuts, toasted and crushed 1 lime, zested and juiced 5g fresh chives, finely sliced 1 pinch sea salt flakes and cracked black pepper SUNSHINE WHIP Ingredients 200g grilled ripe plantain, peeled weight 130g ripe avocado flesh (approx. 1 small avocado) 40ml unsweetened soy milk, plus extra to loosen 1 garlic clove, roasted or finely grated 7g fresh flat leaf parsley leaves 0.3 tsp sriracha powder 0.3 tsp smoked paprika 3g fine sea salt, adjust to taste We asked King for his recommendation on the best cast iron pan for cooking scallops and so much more, and he told us his go-to is this; the nuovva pre-seasoned cast-iron skillet set, which comes with a 10-inch (25cm) and 12-inch (30cm) pan. He used the larger 12-inch/30cm skillet in this episode. It’s oven-safe and suitable for both indoor cooking and grilling. We tasted those scallops and we agree with Holly - like they’d been on the BBQ, chargrilled to perfection on our little induction hob! An investment you won’t regret!
